I feel like watermelon is the epitome of a summer snack, and the more time I spend on Pinterest, the more delicious watermelon snack ideas I see. Who knew there were so many things you could do with watermelon?!
Turns out watermelon is packed with nutrients, despite the fact that it’s mostly water (hence, the name, I suppose). I love eating watermelon fresh, but I also decided to try combining two Pinterest smoothie recipes into one to add in a few more nutrients and turn it into a delicious power-snack! And delicious it was. The coconut flakes and chocolate chips were an especially wonderful garnish on top, and I’m 100% sure I’ll be making this again. So good.

1 cup of Frozen Watermelon (option: use fresh watermelon and just add ice)
1 cup of Frozen Strawberries
1 cup Coconut Milk
1 tbsp Honey
1 tsp Vanilla
Mini Chocolate Chips (for garnish)
